Leftover Magic: Cheddar Bay Biscuit Peach Cobbler!

You might be raising an eyebrow and thinking, "Leftover Cheddar Bay biscuits? How is that even possible?" But here we are! My family is a bit strange when it comes to food—it’s a miracle if we have any biscuits left after a meal. Yet, I found myself with six of those cheesy, buttery delights from a store-bought mix just sitting there, begging for a new purpose.

Inspired by the art of "Food Recycling," I decided to take these leftovers and turn them into something magical: Peach Cobbler! Yes, you heard that right! Combining a beloved classic with the savoury richness of Cheddar Bay biscuits sounded like a culinary adventure I simply couldn't resist.

After using two of the biscuits as a crumb topping for an irresistible baked mac and cheese, I still had four left, which became the star of the cobbler show. Here’s how I made it happen:

  1. Preparation: Preheat your oven to 375. Let's get those flavours mingling!

  2. Peach Layer: I used Costco's bottled Peaches because I always have those in my pantry. Toss them in a simple syrup of a half cup of sugar with 1cup of water & cinnamon This sweet, tangy layer serves as the fruity base of the cobbler.

  3. Biscuit Base: Crumble your leftover Cheddar Bay biscuits right into the peach mixture. The cheese and buttery goodness will melt beautifully and create a unique flavour explosion.

  4. Bake: Pour the peach and biscuit blend into a baking dish and pop it in the oven. Bake for about 30 mins, adjusting the time if necessary until the top is golden and bubbly.

  5. Serve: Let it cool for a few minutes, if you can wait, before digging into this unexpected dessert. A scoop of vanilla ice cream on top wouldn't hurt either!
